SPINACH, ADELLA FETA AND PINE NUT SALAD

Ingredients:

  • 450g baby spinach
  • 450g Adella feta cheese, cubed
  • 8 tsp pine nuts, lightly toasted
  • 1 red onion, sliced finely
  • sherry vinegar, to taste
  • light and fruity olive oil, to drizzle

Method:

1. Place the washed spinach with the feta, onion and pine nuts in a bowl.
2. Sprinkle with sherry vinegar, then drizzle with the oil, which allows the dressing to coat all the ingredients.
3. Serve alongside grilled lamb, chicken or just with some crusty ciabatta
