Ingredients:
- 450g baby spinach
- 450g Adella feta cheese, cubed
- 8 tsp pine nuts, lightly toasted
- 1 red onion, sliced finely
- sherry vinegar, to taste
- light and fruity olive oil, to drizzle
Method:
1. Place the washed spinach with the feta, onion and pine nuts in a bowl.
2. Sprinkle with sherry vinegar, then drizzle with the oil, which allows the dressing to coat all the ingredients.
3. Serve alongside grilled lamb, chicken or just with some crusty ciabatta
